Autumn is here in all its glory and, personally, I couldn’t be happier! I find that the beginning of every season prompts me to declare that this is my favorite season. And this is Autumn is no different. We’re fortunate to live in the Northeast where the seasons are so clearly defined. As Summer is slowly fading away, I have very fond memories of the fun times and special adventures, but now it’s time to embrace the spectacular Fall foliage and the cooler temperatures while we prepare for, hopefully, a snowy Winter. I’ve been enjoying these warm Fall afternoons, sipping a cup of tea in the sunshine while I look at the distant trees and enjoy the colorful baskets of mums beside me. I hope you have been equally enjoying this blessed season.

Spiced tea blends are delicious to drink, of course, but they also are a welcome addition in your favorite recipes. Want to try something new? There are numerous recipes on line using spiced teas in breads, muffins, cookies and more.
Grind mulling spices or chai masala tea in a spice mill or clean coffee grinder. Put sugar in a 1 quart mason jar filling 1/3 way add 1 or 2 Tbsp of ground mulling spices or chai masala tea and then add more sugar on top. Leave a few inches at the top of the jar, cap it and store in a cool, dry place. Every day stir the spices and sugar to infuse the flavor throughout. After about 1 week the sugar usually has been infused with a lot of the flavor. Use this spiced sugar to roll molasses cookies or sugar cookies in, add to hot beverages (it’s great in tea), and any recipe that you feel needs a little spicing up!
Simmer mulling spices or chai masala tea in maple syrup for 5 minutes. Strain and refrigerate. Use within 2 weeks on pancakes, waffles, drizzled over ice cream or in any of your favorite recipes.
